Roasted Cabbage with Tofu–Olive Oil Cream, White Beans, Sauerkraut, Parsley Oil & Dijon Mustard
Cabbage is one of the most humble yet powerful vegetables of the winter kitchen.
This dish draws inspiration from a recipe by Chef Dominique Crenn, who often reminds us that cabbage deserves far more respect than it usually receives. When roasted properly, cabbage develops deep sweetness, caramelized edges and a rich, almost buttery texture.
At Cbovero we add cannellini beans and a silky tofu–olive oil cream to create a dish that is both nourishing and balanced. Fermented sauerkraut brings brightness and complexity, while parsley oil and Dijon mustard add herbal freshness and gentle acidity.
It is a dish built on restraint: simple ingredients, carefully prepared, allowing the cabbage to remain the quiet center of the plate.
Nutritional Benefits
Cabbage delivers fiber and sulfur-rich compounds that support digestion and natural detoxification. White beans provide plant protein and slow carbohydrates that help maintain steady energy and satiety. Fermented sauerkraut introduces beneficial probiotics that support gut health and microbial diversity. Silken tofu adds complete plant protein and calcium, supporting muscle recovery and bone health. Parsley bring antioxidants that support immune function and reduce inflammation.
Ingredients & Allergens

Healing Chickpea Stew with Seasonal Leafy Greens, Wholegrain Basmati Rice, Coconut Yogurt & Anti-Inflammatory Tadka
Some meals are designed not only to feed us, but to restore us.
This chickpea stew draws from traditions of slow, nourishing cooking where spices are used not only for flavor but for their warming and restorative qualities. Turmeric, ginger and garlic create a deeply aromatic broth enriched with coconut milk and brightened with fresh lime.
Tender chickpeas and seasonal leafy greens bring plant protein, fiber and minerals, while wholegrain basmati rice provides grounding energy.
A final tadka — crispy chickpeas toasted with spices — adds warmth and texture, while coconut yogurt and fresh mint bring cooling balance.
It is a bowl meant for days when the body asks for calm, warmth and nourishment.
Nutritional Benefits
Chickpeas provide plant protein and slow-release carbohydrates that support stable energy and satiety. Leafy greens like cavolo nero and spinach supply iron, folate and antioxidants that support cellular repair and immunity. Turmeric, ginger and garlic bring natural anti-inflammatory compounds that help calm the body and aid digestion. Wholegrain basmati rice feeds beneficial gut microbes while keeping blood sugar steady. Coconut yogurt adds gentle probiotics and healthy fats, supporting microbial diversity and digestive balance.

Chickpeas, full-fat coconut milk, wholegrain basmati rice, onion, garlic, ginger, cavolo nero / kale / spinach, mint, turmeric, red pepper flakes, coriander, fenugreek, cinnamon, cumin, black pepper, cardamom, vegetable stock (parsnip, celery, carrot, leek, onion, parsley, sun-dried tomato, rock salt and spices), lime juice, extra virgin olive oil, coconut yogurt.

ADD MEAL
Butternut Squash Brothy Beans with Crispy Brussels Sprouts, Estragon, Szechuan Chili Oil & Toasted Seeds
This dish is built around a simple but powerful technique: turning vegetables into depth.
Butternut squash is slowly softened with garlic and white wine, then blended into a light broth that becomes both the sauce and the structure of the dish. The result is a base that feels rich without being heavy.
Butter beans gently warm in this broth, absorbing its sweetness and aromatic notes. Instead of layering many ingredients, the dish relies on contrast: crisp roasted Brussels sprouts for texture, fresh estragon for brightness, and toasted seeds for warmth and nuttiness. A final drizzle of Szechuan chili oil introduces subtle heat and fragrance, cutting through the richness and bringing the bowl into balance.
It is a reminder that satisfying food does not require complexity — only attention to technique and respect for the ingredient.
Nutritional Benefits
Butternut squash and Brussels sprouts provide fiber and antioxidants that support digestion and steady energy. Butter beans add plant protein and slow carbohydrates, helping you stay satisfied and focused. Pumpkin seeds and pine nuts bring healthy fats and essential minerals like magnesium and zinc. Fresh estragon aids digestion and adds aromatic compounds that stimulate appetite. A touch of Szechuan chili oil gently activates circulation and metabolism while brightening the dish with warming spice.
